About the Author
In addition to celiac, I also have 17 food allergies. And I'm deathly allergic to peanuts, can't even be near someone who just ate a peanut-y stack or I could end up in the ER.I'm still learning how to live and eat well despite a very restricted diet, which (due to my peanut allergy) also means a restricted life.

Debi’s Confetti Salad
I’ve shared this recipe before, but I had to post it on The Crunchy Cook again when I realized yesterday that it’s one of the few recipes previously posted on my blog that I can still eat. I can eat … Continue reading
Debi’s Sour Cream and Cheese Enchiladas
Whenever I tell anyone that I’m gluten-free the first thing they usually do is list off all of their favorite bready foods—breadsticks, sourdough, donuts, fried chicken, waffles—and lament my inability to eat them. They imagine my regular diet being completely … Continue reading
Pepperoni Pizza (gluten-free & low carb)
One of the low points commonly reached by newly gluten-free folks is the oh-my-gosh-I’ll-never-eat-pizza-again phase. Of course, this isn’t true because there are several good pizza options and some restaurants now even serve gluten-free pizzas. But when you’re new, all … Continue reading
Eggplant Bake (gluten-free & vegetarian)
Well, I might not have been posting but I’ve still been photographing pictures of my food and taking notes on how I’ve altered different recipes. My laptop was temporarily out of commission, but now that I’m back online I can … Continue reading
Tomato and Tuna "Sandwich" (gluten-free)
One of my biggest complaints about a lot of gluten-free cookbooks is that they focus almost exclusively on how to bake breads. Now, there’s nothing wrong with a piece of toast now and then. But prior to going gluten-free I … Continue reading
